French rule brought wheat bread to Vietnam, where bakers cut the flour with rice to get a thin, crackling, airy loaf, and Saigon cooks filled it with local pickles and herbs. Refugee communities carried it to the United States after 1975, where "Vietnamese sandwich" served as the menu translation until bánh mì grew familiar.
