E. S. Larsen and W. T. Schaller described cebollite in 1914 from Iron Hill in Gunnison County, Colorado, in the catchment of Cebolla Creek. It forms during the late alteration of uncompahgrite, a rare melilite rock exposed there. It has since been reported from zeolitized crustal xenoliths carried up in kimberlite.
