Lombardi's in Manhattan, traditionally credited as the country's first pizzeria, opened in 1905, and the coal-oven style spread outward from lower Manhattan. New Yorkers credit the city's tap water for the crust, a claim nobody has managed to show; oven temperature and flour do far more of the work.
