Bali is the main Indonesian holiday destination for Australians, and the phrase is chiefly Australian informal usage on the model of Delhi belly and Montezuma's revenge. The illness is usually bacterial, most often from bacteria picked up from water, ice or uncooked food. The rhyme carried the term far beyond anything specific to the island.
