The British Baking Industries Research Association developed it in 1961 at its laboratory in Chorleywood, Hertfordshire, so that weaker home-grown wheat could still make an acceptable loaf. It cut fermentation from hours to minutes and now accounts for the great majority of bread sold in the UK.
