Well attestedThe cake is named for a mountain range because its cracked top looks like snowy peaks.
Choux pastry puffs and splits unevenly in the oven, and under a dusting of powdered sugar the ridged crust suggests the Carpathians under snow. A Polish linguist tracing the word found its earliest printed appearance in a 1972 teaching script for philology students, which makes the name much younger than the pastry. The range itself curves through Poland, Slovakia, Ukraine, and Romania.
